So, I kind of made this by accident as I was using what I had left over in my cupboard. This recipe is, like the title suggest, easy but still tastes incredible. It is also incredibly flexible with ingredients, my choice of potato and carrots with the lentils can easily be switched for things like celery, beans, asparagus… the list goes on.
This recipe serves 1
1/4 cup red/brown lentils
1 large carrot
1 medium sized white potato
1 tsp mild curry powder
1 tsp cumin
1 tsp of smoked paprika
450ml veg stock
1.5 tsp of coconut oil
- Chop the potato into chunks of about 1cm cubed and chop the carrot to similar thickness if possible.
- Putting the coconut oil on a medium heat and add the chopped veg, lentils and spices and fry off for 5 minutes.
- Add veg stock and allow to simmer until potatoes are soft.
And you’re done – as easy as that! I like to add spinach to mine, I place it on the bottom and it wilts and socks up the flavour of the dish.
Who said vegan meals can’t be easy and cheap?
